Even though October is around the corner, these are not the last of the tomatoes, but maybe I won’t bore you with the last batch. Maybe. I roasted them all, all except this one, which I ate for lunch:
Because the types and sizes varied so much, I had to remove them in stages, with the largest tomato wedges last. I even had to turn those over near the end. They’re just about cooled and going into the freezer.
Roasted at 350° for 30-60 minutes. Drizzled with olive oil, pepper, and dried thyme.
P.S. Just to let you know that I know tomatoes are fruits, but I’ve been putting them in the vegetables category just to avoid this conversation. Maybe I should put them in both categories. What do you think?
