I ran across this recipe in the Wegmans Menu magazine. Wegmans is one of the local grocers in my town, and right around the corner, so I go there often. I made only a few changes to their recipe, so I’m not going to write it out. You can find it here: Wegmans Organic Apple Upside down Cake
These were my only changes:
- I didn’t use anything organic
- I used walnuts instead of pecans, just because I prefer them
- I sprinkled a little cinnamon over the brown sugar in the bottom of the pan
My apples must have been large, because I couldn’t even use up two apples to cover the bottom of the pan. The remaining slices I chopped and added to the batter with the remaining nuts. Very good, moist, not overly sweet, and I like the crunch of the nuts. It’s a dense cake, made more so by all the walnuts and chopped apple I added, but what I would expect from a hearty fall cake. My topping bubbled up the sides of the pan, making the outside more brown than the one you will see on their site.
